Which loops are used for poultry trussing?
Poultry is trussed with elastic loops, also known as chicken loops or trussing loops. These are short, stretchable loops slipped around a whole bird or a rolled cut to hold it in shape during preparation, cooking and presentation. A loop binds and trusses at specific points, so it is fast to apply on a poultry line and easy to remove. For larger poultry products that need shaping rather than point binding, an elastic meat net is available: depending on the product, a stability net or a micromesh net.
